Step 1: Choose Your Wood
Like pairing the right beverage with your meal, choosing a specific wood can bring out the best flavor in your BBQ. The variety of wood choices are practically limitless, from Alder and Apple to Maple and Mesquite. For those new to smoking we suggest starting out with one of the classics such as Hickory or Oak.
Step 2: To Soak or Not to Soak
While hotly debated among BBQ aficionados, really the choice is yours and you can’t go wrong. You can soak your wood chips using plain old water or spice it up by using some beer, wine or apple vinegar to add even more flavor. Just be advised soaking will slow the smoking at the start. If you prefer using dry wood chips, have at it, our holes are designed to prevent burning the wood too quickly.
Step 3: Preparation And Placement
We always recommend stacking the smoker box to the brim. Once your wood chips are loaded up, place the smoker box right on top of the burners or charcoals and crank the heat up high to get things going.
Step 4: Game Time
Now the real fun begins. Once smoke is sighted (10-15 minutes) adjust your temperature according to your recipe and throw your feast on the BBQ. Grill away and be sure to keep the lid closed as much as possible to allow the smoke to do its trick.
